Anyone else addicted to watching those mini how-to cooking videos on Facebook? They’ve been around for years and despite feeling incredibly inspired every time I watch them, I’ve never actually gotten off my ass to try a recipe myself… and I have a weird feeling I’m not the only one.
Coincidentally, I am on a mission to SAVE MO MONEY before 2018 (aka I’ve been eating out a lot less) so I’m taking this opportunity to experiment with some of my fav saved foodie vids to answer your (ok, my) burning questions: “Is that actually easy to make?” “Will mine actually look like that?” “Will that actually taste good?”
First on my list:
I went to the Backstreet Boys concert last night (YASSS, it was amazing) so I woke up slightly hungover and completely ravenous this morning. My first instinct? Pick up something greasy and sinful – le duh. Unfortunately, my 2nd annual Halloween party is tonight and I can’t be a proper Kim Possible with a big, bloated gut (hello, she wears a crop top) so I opted to whip up a lighter option using ingredients I already had in my refrigerator. Delish call them Ham & Cheese Egg Cups, I call them….
Low Carb Breakfast Bites
The video was not deceiving AT ALL – these were actually incredibly easy to make! Whether you’re meal prepping for yourself, entertaining your in-laws, or showing off for an unexpected breakfast guest (LOL) you’ll hit a home run every time with a batch of these bad boys.
Things you’ll need:
1. Boarshead Maple Honey Ham
2. Shredded cheese
3. Eggs
4. Salt + pepper
(Make sure you let your breakfast bites cool before taking them out of the pan. I served mine with spicy verde salsa!)
I was OVER THE MOON when these turned out to look (almost) exactly like the ones in the video AND actually tasted good… I’m not sure why I was expecting this experiment to turn into a disaster, but it wound up being a 100% success. Keep checking back to see what video I try next!
